great for baked fries July 21, 2010 Hank Kingsley (NorCal) i love sweet potato fries. silpat makes it easy to bake them and they come out with a nice amount of crispness. and finally i can bake frozen battered cod with no sticking as well.

Some people complained that this item is too expensive but when you consider the fact that you never have to buy parchment paper again, it pays for itself. I purchased one for a little less than 15 dollars on ebay (Yes it is the genuine product. If you want to save a little money (about 7 dollars) The same seller I got mine from are selling this same size silpat @ 2 for 24.50. (free shipping). His user name is "qurbis" (just go to the advanced search on ebay and search for that user) and this is a link to a listing of the two silpats. (that probably wont work for long though so just go to the advanced search thing) [...]
He ships really fast and sells genuine silpats with the cleaning instructions and all
COOKIES:
Just listen to all of the other reviews on here saying that this is great for baking because I haven't used it on anything but cookies yet but using it for the cookies previously turned out fabulous. Be careful as it is really hot out of the oven so don't expect to take it out with your bare hands with ease like you would do parchment paper or aluminum foil.
CLEANING:
It is a hard to clean, not in a chemical sense that it takes a long time to actually get it clean with soap but in a physical sense that unless your sink (or one half of it) is empty it will be a little difficult as it flops around while you're trying to clean/rinse it. But this minor problem isn't enough to only give four stars as the item probably wouldn't work as well if it weren't made of the flexible material like it is.
SMOKING PROBLEM:
I didn't have a problem at all with smoking like others but then again the highest I've tried it at so far is 350F
DOUGH ROLLING:
Some say that it is good for rolling doughs and I haven't tried it yet but yes the material is completely nonstick in the sense that it probably would be perfect for rolling doughs.
SIZE:
This size is PERFECT by the way. I debating on which size to get and this one won out and now that I have it, I think the smaller size they have would probably be a little too small unless you only plan on making like 6 big cookies at a time. This one can easily fit 10 of them.(big cookies as in 1/4th a cup of dough big)
OVERALL: Great value, No more buying parchment paper and no more burnt cookies! Not sure about other brands but this one doesn't stain with greasy items as a silicone (the rubber-type silicone) brand I tried before of a similar type item. (And trust me, the cookies I bake have a LOT of butter in them so they're pretty greasy)
Rejuvenate worn out cookie sheets July 18, 2010 tractorbabe Anyone who uses non-stick cookie sheets and pans that become worn out and cause cookies to stick and burn, will love this. I used to throw out my pans and get new ones....not anymore! This is my second one so that I can just stick another pan in the oven while the other one is cooling. Very easy to clean. I wish I had known about these sooner!
Freezing berries June 13, 2010 C. G. King (Horse Country, VA USA) Baking cookies is only one use that makes this mat a kitchen essential, for example--when berries are in season I freeze bags full using this mat. In order to extract various quantities later for smoothies, ice cream, pies or jam, they have to be frozen individually and this mat makes the task easy. By laying washed strawberries, pitted cherries, blueberries or grapes on this mat lining a cookie sheet, the fruit freezes perfectly, releases easily and can be bagged afterward. When using a cookie sheet alone, the berries stick like a tongue on a frozen pole in winter. Frozen berries can replace ice cubes in cold drinks like tea or lemonade and a little bowl of frozen cherries is a sensational hot weather treat.
And speaking of pies--they run over in the oven sometimes, don't they? By baking the pie on a cookie sheet lined with this mat, cleanup is a breeze. The sticky goo peels right off the mat.
I have washed the mat in the dishwasher and even though it flops over, it gets clean, and I have washed it with a dish brush in the bottom of the sink. To dry it, I hold a dry dishtowel under my chin and lay the mat against it while wiping the exposed side with another dishtowel. That saves hanging the mat somewhere to dry on its own. I store the mats between two cookie sheets in a rack where they are handy and take up virtually no extra space. I own three of these things and can't imagine various tasks without them. Highly recommended.
You'll never go back to cookie sheets! June 8, 2010 Karen D. Johnson (portland, or USA) Once you try the silpat baking mat, you'll never ever use a plain cookie sheet again! This is my second one, because I thought it would be nice to have more than one. My original one is around 8 years old and still going strong. I can't believe the stuff that I have put on this mat: beets, cheese, pies, cookies, etc. Everything slides off, plus it all cooks more evenly than a regular sheet.
